OUR OLIVE OIL

Thallon is an early harvest olive oil of high quality, with rich and fruity flavor. It is a natural product of unripe (green) olives of the Hondrolia variety, produced only by mechanical means at ambient temperature (27ºC), without the addition of water.


It is a natural olive juice, from fresh and healthy early harvest olives. Due to its high content of polyphenols, Thallon has gained a health claim, according to European Regulation No. 432/ 2012 of the European Food Safety Authority (EFSA).


It has a strong fruity and at the same time soft taste because of its very low acidity. It also leaves a slightly bitter aftertaste and a slight burning sensation in the throat, due to the high content of Oleocanthal and Oleacein, which have significant biological activity and have been attributed with anti-inflammatory, antioxidant, cardioprotective and neuroprotective properties.


Thallon is one of the very few early harvest olive oils on the market, produced from a specific variety of olive trees, and in limited quantities, while every packaging contains; a chemical analysis and a certification of health claim. Each year’s crop is stored in a separate tank from which samples are extracted for chemical analysis during the final product standardization. This procedure ensures that every bottle of Thallon contains the exact same quantity and quality of olive oil.


Our olive groves are located in the area of Halkidiki, Greece, while the variety of olive trees from which Thallon Olive Oil is produced is "PDO Hondrolia Halkidiki", world-famous for its quality and size.

ACIDITY

THALLON has an acidity of less than 0.3% (< 0,3) and therefore is classified as Extra Virgin Olive Oil (please see the chemical analysis here, the pesticides analysis here and the test report here).

 

TASTE

THALLON has all the tasty features of the Hondrolia variety, that is, a rich fruity flavor with aromatic notes of grass, herbs, pepper, tomato and a balanced bitter and spicy flavor (please find the flavor profile here). Recommended to be consumed in its raw form in the morning or as an accompaniment to salads, boiled or roasted vegetables and grilled meat.
